Bake Mom these Super Fudgy Stay Home Brownies by Candace Nelson

I’ve been dreaming up some comforting, simple recipes that are kid-friendly and fun for the whole family to bake together. Many moms out there share my constant hankering for chocolate and Mother’s Day calls for something extra special! These flourless, dark chocolate brownies check all the boxes: decadent and fudgy with a beautiful shiny crust. As a bonus, you likely already have all these ingredients in your pantry.

Super Fudgy Stay Home Brownies
Makes 16 brownies

  • 8 oz semi sweet chocolate, chopped (I used 62% Scharffen Berger)
  • 6 tbsp unsalted butter
  • ¼ cup unsweetened cocoa powder (I used Scharffen Berger)
  • 2 large eggs, room temperature
  • ⅔ cup granulated sugar
  • 2 tsp vanilla extract
  • 3 tbsp cornstarch
  • ¼ tsp salt

Preheat the oven to 325 degrees. Prepare an 8x8 inch square pan by brushing lightly with olive oil, then lining the bottom and sides with parchment paper.

Melt chocolate and butter in the microwave, stopping to stir periodically until completely melted and smooth. Sift cocoa powder over the top of the chocolate mixture and mix briskly to combine.

Meanwhile, in a stand mixer, beat the eggs and sugar on medium-high speed for a few minutes until very pale and fluffy. On medium speed, mix in chocolate butter mixture until fully combined. Add vanilla, cornstarch and salt and mix on low speed until blended.

Bake for for approximately 25 minutes, until top is puffed and shiny and the sides are set.
